Ingredients

  • 1 cup corn, drained

  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black beans, kidney beans, chickpeas, and corn.
  2. Add diced bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
