- 1 delicata squash, sliced
- 1 cup shredded cheese (such as mozzarella or cheddar)
- 1 pie crust
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the pie crust on a baking sheet.
- In a bowl, mix the sliced squash with olive oil, salt, pepper, thyme, and rosemary.
- Layer the cheese on the pie crust, leaving a border around the edge.
- Arrange the seasoned squash on top of the cheese.
- Fold the edges of the crust over the filling, pleating as necessary.
- Brush the crust with the beaten egg.
- Bake for 25-30 minutes or until the crust is golden brown.
- Let it cool for a few minutes before slicing.
