Description
This jelly uses dandelion petals and honey for a floral taste. You can spread it on bread or biscuits.
Ingredients

- 2 cups dandelion petals
- 2 cups water
- 2 tablespoons lemon juice
- 1 box powdered pectin
- 2 cups honey
Instructions
- Pick fresh dandelions and remove all green parts.
- Place petals in a bowl and pour boiling water over them.
- Let the mixture steep for four hours.
- Strain the liquid through a fine mesh sieve.
- Pour the liquid into a large pot.
- Add lemon juice and pectin to the pot.
- Bring the mixture to a boil.
- Stir in the honey and boil for one minute.
- Pour the hot jelly into jars.
- Process the jars in a water bath for ten minutes.
Notes
- Use only the yellow petals to prevent a bitter taste.
- Pick flowers from areas without chemicals.
- Store your jars in a cool dark place.
