Description

This jelly uses dandelion petals and honey for a floral taste. You can spread it on bread or biscuits.


Ingredients

  • 2 cups dandelion petals
  • 2 cups water
  • 2 tablespoons lemon juice
  • 1 box powdered pectin
  • 2 cups honey

Instructions

  1. Pick fresh dandelions and remove all green parts.
  2. Place petals in a bowl and pour boiling water over them.
  3. Let the mixture steep for four hours.
  4. Strain the liquid through a fine mesh sieve.
  5. Pour the liquid into a large pot.
  6. Add lemon juice and pectin to the pot.
  7. Bring the mixture to a boil.
  8. Stir in the honey and boil for one minute.
  9. Pour the hot jelly into jars.
  10. Process the jars in a water bath for ten minutes.

Notes

  • Use only the yellow petals to prevent a bitter taste.
  • Pick flowers from areas without chemicals.
  • Store your jars in a cool dark place.
