Ingredients

  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 6 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups cooked rice
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1 avocado, sliced
  • Chopped cilantro for garnish

Instructions

  1. In a bowl, mix olive oil, orange juice, lime juice, garlic, cumin, oregano, salt, and pepper.
  2. Add chicken thighs to the marinade. Refrigerate for at least 1 hour.
  3. Preheat grill or skillet over medium heat.
  4. Cook chicken for 6-7 minutes on each side until fully cooked.
  5. Remove chicken and let it rest for 5 minutes. Slice into strips.
  6. In bowls, layer rice, black beans, corn, chicken, and avocado.
  7. Garnish with chopped cilantro.
