Cuban Mojo Chicken Bowls with flavorful marinade.
Ingredients

- 2 lbs halal chicken thighs
- 1/4 cup olive oil
- 1/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 6 garlic cloves, minced
- 1 tablespoon ground cumin
- 1 tablespoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups cooked rice
- 1 cup black beans, rinsed
- 1 cup corn
- 1 avocado, sliced
- Chopped cilantro for garnish
Instructions
- In a bowl, mix olive oil, orange juice, lime juice, garlic, cumin, oregano, salt, and pepper.
- Add chicken thighs to the marinade. Refrigerate for at least 1 hour.
- Preheat grill or skillet over medium heat.
- Cook chicken for 6-7 minutes on each side until fully cooked.
- Remove chicken and let it rest for 5 minutes. Slice into strips.
- In bowls, layer rice, black beans, corn, chicken, and avocado.
- Garnish with chopped cilantro.

- Use quinoa instead of rice for a healthier option.
