- 2 duck breasts
- Salt to taste
- Black pepper to taste
- 1 cup fresh blackberries
- 1/2 cup chicken broth
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon butter
Instructions
- Preheat your oven to 400°F (200°C).
- Score the skin of the duck breasts in a crisscross pattern.
- Season the duck breasts with salt and pepper.
- Place the duck breasts skin side down in a cold, dry skillet.
- Turn the heat to medium and cook until the skin is crispy, about 6-8 minutes.
- Flip the duck breasts and transfer the skillet to the oven.
- Bake for 6-8 minutes for medium-rare.
- Remove from the oven and let rest for 5 minutes.
- In a saucepan, combine blackberries, chicken broth, balsamic vinegar, and honey. Cook over medium heat until the sauce thickens.
- Stir in butter until melted.
- Slice the duck breasts and serve with the blackberry sauce.
