- 1 cup dried chickpeas, soaked overnight
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- Oil for frying
- 4 whole wheat wraps
- 1 cup shredded lettuce
- 1 tomato, diced
- 1 cucumber, sliced
- 1/2 cup tahini sauce
Instructions
- Drain and rinse the soaked chickpeas.
- Blend chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper in a food processor until combined but not pureed.
- Form the mixture into small balls or patties.
- Heat oil in a frying pan over medium heat.
- Fry the falafel until golden brown on all sides.
- Prepare the wraps by placing lettuce, tomato, cucumber, and falafel in each wrap.
- Drizzle tahini sauce over the fillings.
- Roll the wraps tightly and serve.
