Ingredients

- 1 lb chicken breasts
- 1 cup shredded coconut
- 1 cup breadcrumbs
- 2 eggs
- 1/4 cup honey
- 1/4 cup flour
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare three bowls: one with flour, one with beaten eggs, and one with a mix of coconut and breadcrumbs.
- Season the chicken with salt and pepper.
- Dip each chicken piece in flour, then in eggs, and finally coat with the coconut-breadcrumb mixture.
- Place coated chicken on a baking sheet.
- Bake for 25-30 minutes until golden brown and cooked through.
- Drizzle honey over the chicken before serving.
Notes
- For extra crunch, fry instead of baking.
- Adjust honey amount to taste.
- Serve with a side of your choice.
