Instructions

  1. In a bowl, whisk together flour, eggs, milk, sugar, vanilla, and salt until smooth.
  2. Heat a non-stick skillet over medium heat.
  3. Pour a ladle of batter into the skillet, swirling to coat the bottom.
  4. Cook for 1-2 minutes until golden, then flip and cook the other side.
  5. Repeat with remaining batter.
  6. In another bowl, whisk together cream, egg yolks, sugar, and vanilla for the filling.
  7. Heat mixture over low heat, stirring until thickened.
  8. Fill each crêpe with the crème brûlée mixture.
  9. Sprinkle granulated sugar on top and caramelize with a kitchen torch.
