Ingredients

- 1 cup all-purpose flour
- 2 large eggs
- 2 cups milk
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/2 cup egg yolks
- 1/2 cup sugar (for filling)
- 1 teaspoon vanilla extract (for filling)
- Granulated sugar (for topping)
Instructions
- In a bowl, whisk together flour, eggs, milk, sugar, vanilla, and salt until smooth.
- Heat a non-stick skillet over medium heat.
- Pour a ladle of batter into the skillet, swirling to coat the bottom.
- Cook for 1-2 minutes until golden, then flip and cook the other side.
- Repeat with remaining batter.
- In another bowl, whisk together cream, egg yolks, sugar, and vanilla for the filling.
- Heat mixture over low heat, stirring until thickened.
- Fill each crêpe with the crème brûlée mixture.
- Sprinkle granulated sugar on top and caramelize with a kitchen torch.
- Serve immediately.
Notes
- Use fresh eggs for best results.
- Make sure to let the filling cool before adding to crêpes.
