Ingredients

- 4 cups ripe tomatoes, halved
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 2 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place tomatoes, onion, and garlic on a baking sheet.
- Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper.
- Roast for 25-30 minutes until tender.
- Transfer roasted vegetables to a pot.
- Add vegetable broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Blend the mixture until smooth.
- Stir in heavy cream and heat through.
- Serve hot.

- Store leftovers in the fridge for up to 3 days.
- Garnish with fresh basil if desired.
