Instructions

  2. Place tomatoes, onion, and garlic on a baking sheet.
  3. Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper.
  4. Roast for 25-30 minutes until tender.
  5. Transfer roasted vegetables to a pot.
  6. Add vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 10 minutes.
  8. Blend the mixture until smooth.
