- 8 oz pasta
- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a pan, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in pumpkin puree, heavy cream, salt, pepper, and nutmeg.
- Cook for 5 minutes until heated through.
- Add the cooked pasta and Parmesan cheese to the sauce. Mix well.
- Serve hot, garnished with fresh parsley.

- Adjust seasoning to taste.
- Can substitute heavy cream with coconut milk for a dairy-free option.
