A rich and creamy dish featuring gnocchi tossed in homemade pesto.
Ingredients

- 1 package gnocchi (approximately 500g)
- 1 cup fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/3 cup pine nuts
- 1/2 cup olive oil
- 2 cloves garlic
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Cook the gnocchi according to package instructions.
- In a food processor, combine basil, Parmesan cheese, pine nuts, garlic, salt, and pepper.
- Blend while gradually adding olive oil until smooth.
- In a pan, heat the pesto over low heat.
- Add the heavy cream and stir until combined.
- Mix in the cooked gnocchi until well-coated.
- Serve immediately with extra Parmesan on top.
Notes
- Adjust the consistency of the pesto with more olive oil if needed.
- Store leftovers in an airtight container in the fridge.
- Garnish with cherry tomatoes for added color.
