Description

Creamy Dijon Chicken with Potatoes is a flavorful dish that combines tender chicken with creamy sauce and potatoes.


Ingredients

  • 4 boneless chicken breasts
  • 2 cups baby potatoes, halved
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt and pepper and cook until browned, about 5 minutes per side.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add onion and garlic, sauté until softened.
  6. Add baby potatoes and sauté for 5 minutes.
  7. Stir in heavy cream and Dijon mustard, mixing well.
  8. Return chicken to skillet, spooning sauce over the top.
  9. Transfer skillet to the oven and bake for 20-25 minutes until chicken is cooked through.
  10. Garnish with fresh parsley before serving.

  • Adjust the thickness of the sauce by adding more or less cream.
  • Use any preferred cut of chicken.
