- 4 boneless chicken breasts
- 2 cups baby potatoes, halved
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper and cook until browned, about 5 minutes per side.
- Remove chicken from skillet and set aside.
- In the same skillet, add onion and garlic, sauté until softened.
- Add baby potatoes and sauté for 5 minutes.
- Stir in heavy cream and Dijon mustard, mixing well.
- Return chicken to skillet, spooning sauce over the top.
- Transfer skillet to the oven and bake for 20-25 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.

- Adjust the thickness of the sauce by adding more or less cream.
