Description
A refreshing couscous salad with dried apricots and mint.
Ingredients

- 1 cup couscous
- 1 1/4 cups boiling water
- 1/2 cup dried apricots, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- In a bowl, combine couscous and boiling water. Cover and let sit for 5 minutes.
- Fluff couscous with a fork.
- Add chopped apricots, mint, and red onion to couscous.
- In a separate bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and mix well.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Adjust seasoning to your preference.
- Can be served as a side dish or main course.
- Substitute other dried fruits if desired.
