Description

- 1 cup jasmine rice
- 14 ounces coconut milk
- 1 red bell pepper sliced

- 2 garlic cloves minced
- 1 tablespoon oil
Instructions
- Cook the rice according to the package directions.
- Heat the oil in a skillet over medium heat.
- Add the chicken and cook until it is no longer pink.
- Put the bell pepper in the pan and cook for three minutes.
- Add the garlic and ginger to the skillet.
- Stir in the coconut milk and soy sauce.
- Simmer the sauce for ten minutes to thicken it.
- Add the lime juice to the pan.
- Spoon the chicken and sauce over the rice.
Notes
- Replace jasmine rice with cauliflower rice for fewer carbs.
- Add snap peas for extra crunch.
