Ingredients

  • 2 chicken breasts
  • 1 cup jasmine rice
  • 1 can coconut milk
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 tablespoon cooking oil
  • 1 teaspoon ginger
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Wash the rice in a bowl.
  2. Boil two cups of water.
  3. Add the rice and cook for fifteen minutes.
  4. Rub salt and pepper on the chicken.
  5. Heat oil in a pan.
  6. Fry the chicken until brown on both sides.
  7. Take the chicken out of the pan.
  8. Cook the garlic and ginger for one minute.
  9. Stir in the coconut milk and honey.
  10. Put the chicken back in the sauce.
  11. Simmer for five minutes.
  12. Place the chicken on the rice.

Notes

  • Use full fat coconut milk.
  • Add lime juice at the end.
  • Serve while hot.
