Ingredients

- 1 lb chicken breast, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 can coconut milk (13.5 oz)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add diced chicken and cook until browned.
- Add sweet potatoes and ginger, stir well.
- Pour in coconut milk, season with salt and pepper.
- Cover and simmer until sweet potatoes are tender.
- Garnish with fresh cilantro before serving.
