Description
This soup combines chicken with tomatoes and spices. You add chips and avocado to your bowl.

- 1 tablespoon olive oil
- 1 diced onion
- 2 minced garlic cloves
- 4 cups chicken broth
- 14 ounces diced tomatoes
- 15 ounces black beans
- 1 cup corn
- 2 cups shredded chicken
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper
- Tortilla chips
- 1 avocado
- 1/2 cup shredded cheese
Instructions
- Heat the oil in your pot.
- Cook your onion and garlic for five minutes.
- Pour in your broth and tomatoes.
- Add your beans corn cumin and chili powder.
- Simmer the soup for 20 minutes.
- Stir in your shredded chicken.
- Cook for five more minutes.
- Ladle your soup into bowls.
- Top with chips avocado and cheese.
