Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas with a fork.
  3. Add melted butter and mix well.
  4. Stir in baking soda and salt.
  5. Add sugar, egg, and vanilla extract. Mix until combined.
  6. Gradually add flour and stir until just combined.
  7. In a separate bowl, mix brown sugar and cinnamon.
  8. Layer half of the banana batter in a greased loaf pan.
  9. Sprinkle half of the cinnamon mixture over the batter.
  10. Add the remaining banana batter and top with the rest of the cinnamon mixture.
  11. Bake for 50-60 minutes or until a toothpick comes out clean.
  12. Let cool before slicing.

  • Store leftovers in an airtight container.
  • This bread freezes well.
