Description
Delicious quesadillas with a festive twist for Christmas.
Ingredients

- 4 flour tortillas
- 1 cup shredded cheese
- 1 cup cooked chicken, diced
- 1/2 cup bell peppers, chopped
- 1/2 cup onions, chopped
- 1/2 cup corn
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a skillet over medium heat.
- Sauté onions and bell peppers until soft.
- Add cooked chicken, corn, cumin, paprika, and salt. Mix well.
- Place a tortilla in the skillet.
- Sprinkle half of the cheese on one half of the tortilla.
- Add the chicken mixture on top of the cheese.
- Sprinkle the remaining cheese over the chicken mixture.
- Fold the tortilla over and cook until golden brown, about 2-3 minutes.
- Flip and cook the other side until golden brown.
- Repeat with remaining tortillas.
- Cut into wedges and serve.
Notes
- Serve with salsa or guacamole.
- You can add other vegetables as desired.
- Use halal chicken for a festive meal.
