Description
Chocolate Rosewater Macarons are delicate French cookies filled with a rich chocolate ganache infused with rosewater.
Ingredients

- 1 cup almond flour
- 1 3/4 cup powdered sugar
- 1/4 cup cocoa powder
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon rosewater
- 1/2 cup dark chocolate, chopped
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix almond flour, powdered sugar, and cocoa powder.
- In another bowl, whip egg whites until foamy, then gradually add granulated sugar.
- Beat until stiff peaks form.
- Fold the dry ingredients into the egg whites.
- Add rosewater and mix gently.
- Pipe circles onto a baking sheet lined with parchment paper.
- Let them sit for 30 minutes to form a skin.
- Bake for 15-20 minutes.
- For the filling, heat heavy cream and pour over chopped chocolate. Stir until smooth.
- Let the ganache cool slightly, then pipe onto half of the macarons and sandwich with the other halves.
Notes
- Make sure to sift dry ingredients well.
- Humidity can affect texture; try to bake on a dry day.
- Store in an airtight container for up to a week.
