Description
Delicious mini cheesecakes topped with chocolate-covered strawberries.
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup strawberries, fresh
- 1 cup chocolate chips
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter.
- Press the mixture into the bottom of cupcake liners in a muffin tin.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Fold in whipped cream gently.
- Fill the crusts with the cream cheese mixture.
- Bake for 20 minutes and let cool.
- Melt chocolate chips in a microwave.
- Dip strawberries in chocolate and place on top of cheesecakes.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- Use fresh strawberries for best flavor.
- Store leftovers in the refrigerator.
- These can be made a day ahead.
