Description
Chinese scallion pancakes are crispy, flaky flatbreads filled with green onions.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup boiling water
- 1/2 cup chopped scallions
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
Instructions
- In a bowl, mix flour and salt.
- Add boiling water gradually, stirring until combined.
- Knead the dough for 5 minutes until smooth.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Divide the dough into 4 equal parts.
- Roll each part into a thin circle.
- Brush with oil and sprinkle scallions on top.
- Roll the circle into a log and coil it into a round shape.
- Flatten the coil gently and roll it out again into a pancake.
- Heat oil in a pan and fry each pancake until golden brown on both sides.
Notes
- Serve with soy sauce for dipping.
- Store leftovers in an airtight container.
- You can add spices or herbs for extra flavor.
