Description

Chinese scallion pancakes are crispy, flaky flatbreads filled with green onions.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 1/2 cup chopped scallions
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil

Instructions

  1. In a bowl, mix flour and salt.
  2. Add boiling water gradually, stirring until combined.
  3. Knead the dough for 5 minutes until smooth.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. Divide the dough into 4 equal parts.
  6. Roll each part into a thin circle.
  7. Brush with oil and sprinkle scallions on top.
  8. Roll the circle into a log and coil it into a round shape.
  9. Flatten the coil gently and roll it out again into a pancake.
  10. Heat oil in a pan and fry each pancake until golden brown on both sides.

Notes

  • Serve with soy sauce for dipping.
