A creamy and flavorful chickpea curry with coconut milk.
Ingredients

- 2 cups chickpeas, cooked
- 1 can coconut milk (400ml)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in garlic and ginger; cook for 1 minute.
- Add curry powder and cumin; cook for another minute.
- Pour in coconut milk and add chickpeas.
- Simmer for 15 minutes, stirring occasionally.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.

- You can add vegetables like spinach or bell peppers.
