A hearty and flavorful chickpea and sweet potato curry.
Ingredients

- 1 can chickpeas, drained
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add sweet potatoes and curry powder, stir for 2 minutes.
- Pour in coconut milk and chickpeas.
- Bring to a simmer, cover and cook for 20 minutes.
- Season with salt and garnish with cilantro before serving.
Notes
- Serve with rice or naan.
- You can add spinach for extra nutrients.
- Adjust spice level by adding chili flakes if desired.
