Ingredients

  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add sweet potatoes and curry powder, stir for 2 minutes.
  4. Pour in coconut milk and chickpeas.
  5. Bring to a simmer, cover and cook for 20 minutes.
  6. Season with salt and garnish with cilantro before serving.
