Description
A healthy and refreshing chickpea and quinoa salad.
Ingredients

- 1 cup cooked quinoa
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions and let it cool.
- In a large bowl, combine quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Serve chilled or at room temperature.
Notes
- This salad can be made ahead of time and stored in the refrigerator.
- Add avocado for extra creaminess.
- Feel free to substitute or add any of your favorite vegetables.
