Ingredients

Instructions

  1. Cook quinoa according to package instructions and let it cool.
  2. In a large bowl, combine quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and mix well.
  5. Serve chilled or at room temperature.
