Ingredients

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add the chicken and brown on all sides.
  3. Remove chicken and set aside.
  4. Add onion and garlic, sauté until fragrant.
  5. Add carrots, potatoes, and celery; cook for a few minutes.
  6. Return the chicken to the pot.
  7. Pour in chicken broth and add thyme and rosemary.
  8. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  9. Season with salt and pepper.
  10. Serve hot.
