Ingredients

  • 1 tablespoon vegetable oil
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce (for sauce)
  • 1 teaspoon chili sauce (optional)

Instructions

  1. Marinate the chicken strips with soy sauce, vegetable oil, brown sugar, garlic, and ginger for at least 30 minutes.
  2. Thread chicken onto skewers.
  3. Preheat the grill to medium-high heat.
  4. Grill the skewers for 5-7 minutes on each side until cooked through.
  5. In a saucepan, mix peanut butter, coconut milk, lime juice, soy sauce, and chili sauce over low heat until smooth.
  6. Serve the chicken skewers with peanut sauce on the side.

Notes
