Description

Delicious chicken quesadillas filled with melted pepper jack cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pepper jack cheese, shredded
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onion, sliced
  • 1 teaspoon taco seasoning

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and bell peppers; sauté until soft.
  3. Mix in the shredded chicken and taco seasoning; cook until heated through.
  4. Place one tortilla in the skillet.
  5. Spread chicken mixture on half of the tortilla and top with cheese.
  6. Fold the tortilla over and cook until golden brown on both sides.
  7. Repeat with remaining tortillas.
  8. Cut into wedges and serve warm.
