Delicious chicken quesadillas filled with melted pepper jack cheese.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup pepper jack cheese, shredded
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup bell peppers, sliced
- 1/2 cup onion, sliced
- 1 teaspoon taco seasoning
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onions and bell peppers; sauté until soft.
- Mix in the shredded chicken and taco seasoning; cook until heated through.
- Place one tortilla in the skillet.
- Spread chicken mixture on half of the tortilla and top with cheese.
- Fold the tortilla over and cook until golden brown on both sides.
- Repeat with remaining tortillas.
- Cut into wedges and serve warm.
Notes
- Serve with salsa or sour cream.
- Customize with your choice of vegetables.
- You can use other types of cheese if desired.
