Ingredients

  • 4 chicken thighs
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 tablespoon jerk seasoning
  • 1 can black beans drained
  • 1 bell pepper sliced
  • 2 tablespoons olive oil

Instructions

  1. Season chicken with jerk spice.
  2. Heat oil in a large pan.
  3. Brown chicken on both sides.
  4. Remove chicken from the pan.
  5. Sauté onion and garlic.
  6. Stir in rice and beans.
  7. Add broth to the pan.
  8. Place chicken on top of the rice.
  9. Cover and simmer for 20 minutes.

Notes

  • Rinse rice before use.
  • Use bone in thighs for more flavor.
  • Add fresh lime juice before you serve.
