You make this meal in one pan for a quick dinner with Caribbean flavors.
Ingredients

- 4 chicken thighs
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 onion diced
- 2 garlic cloves minced
- 1 tablespoon jerk seasoning
- 1 can black beans drained
- 1 bell pepper sliced
- 2 tablespoons olive oil
Instructions
- Season chicken with jerk spice.
- Heat oil in a large pan.
- Brown chicken on both sides.
- Remove chicken from the pan.
- Sauté onion and garlic.
- Stir in rice and beans.
- Add broth to the pan.
- Place chicken on top of the rice.
- Cover and simmer for 20 minutes.
Notes
- Rinse rice before use.
- Use bone in thighs for more flavor.
- Add fresh lime juice before you serve.
