- 1 head of cabbage
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt to taste
- Pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Slice the cabbage into 1-inch thick steaks.
- In a bowl, mix olive oil, red wine vinegar, parsley, garlic, red pepper flakes, salt, and pepper to create chimichurri.
- Brush cabbage steaks with olive oil and season with salt and pepper.
- Place cabbage steaks on the grill and cook for 5-7 minutes per side until tender and slightly charred.
- Remove from grill and drizzle chimichurri over the steaks.
- Serve warm.
