Instructions
- Cook the butternut squash until soft, then puree it.
- In a bowl, mix the squash, flour, egg, and salt to form a dough.
- Roll the dough into small logs and cut into bite-sized pieces.
- Boil a pot of salted water and cook the gnocchi until they float.
- In a pan, melt the butter and add the sage leaves.
- Once the butter is browned, add the cooked gnocchi and toss to coat.
- Serve with grated Parmesan cheese on top.
