Description
A flavorful bulgur pilaf made with tomatoes.
Ingredients

- 1 cup bulgur
- 2 cups vegetable broth
- 1 medium onion, chopped
- 2 medium tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1/4 cup parsley, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in diced tomatoes and cook for 5 minutes.
- Add bulgur, vegetable broth, salt, pepper, and cumin.
- Bring to a boil, then reduce heat and cover.
- Simmer for 12-15 minutes until bulgur is tender.
- Remove from heat and fluff with a fork.
- Stir in chopped parsley before serving.
Notes
- Use fresh tomatoes for best flavor.
- Adjust spices according to your taste.
- Can be served warm or at room temperature.
