Ingredients

  • 4 lbs beef short ribs
  • 2 cups pomegranate juice
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat.
  4. Sear the short ribs on all sides until browned.
  5. Remove the short ribs and set aside.
  6. Add onion, garlic, and carrots to the pot. Sauté until softened.
  7. Pour in pomegranate juice, beef broth, soy sauce, and brown sugar. Stir well.
  8. Return the short ribs to the pot, ensuring they are submerged in the liquid.
  9. Cover the pot and place it in the oven. Braise for 3 hours.
  10. Once done, remove from the oven and let rest before serving.

  • Serve with mashed potatoes or rice.
  • Garnish with pomegranate seeds for added flavor.
