Tender braised short ribs glazed with a sweet and tangy pomegranate sauce.
Ingredients

- 4 lbs beef short ribs
- 2 cups pomegranate juice
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the short ribs with salt and pepper.
- In a large oven-safe pot, heat olive oil over medium-high heat.
- Sear the short ribs on all sides until browned.
- Remove the short ribs and set aside.
- Add onion, garlic, and carrots to the pot. Sauté until softened.
- Pour in pomegranate juice, beef broth, soy sauce, and brown sugar. Stir well.
- Return the short ribs to the pot, ensuring they are submerged in the liquid.
- Cover the pot and place it in the oven. Braise for 3 hours.
- Once done, remove from the oven and let rest before serving.
Notes
- Serve with mashed potatoes or rice.
- Garnish with pomegranate seeds for added flavor.
