Ingredients

- 4 halibut fillets (6 oz each)
- 1 lb baby potatoes, halved
- 1 lb asparagus, trimmed
- 2 tbsp olive oil
- 1 cup fish stock
- 2 cloves garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Place halibut fillets in the skillet and sear for 2-3 minutes on each side.
- Add baby potatoes and fish stock to the skillet.
- Cover and transfer the skillet to the oven.
- Bake for 15 minutes.
- Add asparagus and lemon juice, then cover and bake for another 5-7 minutes.
- Season with salt and pepper before serving.

- Ensure halibut is fresh for best flavor.
- You can substitute other fish if desired.
