Description
You cook chicken, orzo, and Boursin cheese in one skillet. This meal takes 30 minutes. You get a simple dinner with little cleanup.

- 1 lb chicken breast, diced
- 1.5 cups orzo pasta
- 5.2 oz Boursin Garlic and Fine Herbs cheese
- 3 cups chicken broth
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper.
- Cook chicken until it is no longer pink.
- Move chicken to a plate.
- Add garlic to the skillet and cook for one minute.
- Stir in orzo and chicken broth.
- Cover the pan and simmer for 10 minutes.
- Stir in the Boursin cheese until melted.
- Add spinach and chicken back to the pan.
- Stir until spinach wilts.
Notes
- Use low sodium broth to reduce salt.
- Add lemon juice for flavor.
- Store leftovers in the fridge for three days.
