Description
A Bombay Sandwich is a popular Indian street food made with layers of chutney, spiced potatoes, and fresh cucumber.
Ingredients

- 4 slices of bread
- 2 medium potatoes, boiled and mashed
- 1 cucumber, thinly sliced
- 1/2 cup green chutney
- 1/4 cup butter
- Salt to taste
- Black pepper to taste
Instructions
- Spread butter on one side of each slice of bread.
- On the unbuttered side, spread a layer of green chutney.
- Spread the mashed potatoes evenly over the chutney.
- Add a layer of cucumber slices on top of the potatoes.
- Sprinkle salt and black pepper to taste.
- Cover with another slice of bread, chutney side down.
- Heat a pan and grill the sandwich until golden brown on both sides.
- Cut into triangles and serve hot.
Notes
- Use white or whole wheat bread as per your preference.
- Adjust the spice level in the chutney if needed.
- This sandwich can be enjoyed cold or hot.
