Description
Bessara is a traditional Moroccan fava bean soup, hearty and full of flavor.
Ingredients
Scale
- 1 cup dried fava beans
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Olive oil for drizzling
- Fresh cilantro for garnish
Instructions
- Soak fava beans overnight in water.
- Drain and rinse beans.
- In a pot, combine fava beans, water, onion, and garlic.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add cumin, paprika, and salt. Cook for another 10 minutes.
- Puree the soup using a blender or immersion blender.
- Serve hot, drizzled with olive oil and garnished with cilantro.

- Adjust seasoning to your taste.
- Serve with crusty bread for a complete meal.
