Description

Bessara is a traditional Moroccan fava bean soup, hearty and full of flavor.


Ingredients

  • 1 cup dried fava beans
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Olive oil for drizzling
  • Fresh cilantro for garnish

Instructions

  1. Soak fava beans overnight in water.
  2. Drain and rinse beans.
  3. In a pot, combine fava beans, water, onion, and garlic.
  4. Bring to a boil, then reduce heat and simmer for 1 hour.
  5. Add cumin, paprika, and salt. Cook for another 10 minutes.
  6. Puree the soup using a blender or immersion blender.
  7. Serve hot, drizzled with olive oil and garnished with cilantro.
