Description
Beetroot Kanji is a traditional fermented drink made from beetroot and spices. It is tangy, refreshing, and beneficial for digestion.

- 2 medium beetroots, peeled and grated
- 1 tablespoon mustard seeds
- 1 tablespoon black salt
- 1 tablespoon ginger, grated
- 4 cups water
- 2 tablespoons lemon juice
Instructions
- In a large jar, combine grated beetroot, mustard seeds, black salt, and ginger.
- Add water and stir well.
- Cover the jar with a cloth and secure it with a rubber band.
- Let it ferment at room temperature for 3 to 5 days, stirring daily.
- Once fermented, add lemon juice and mix well.
- Strain the liquid into bottles and refrigerate.
