Ingredients

  • 1 pound beef tenderloin, trimmed
  • 1 tablespoon olive oil
  • 1 cup mushrooms, finely chopped
  • 2 tablespoons Dijon mustard
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef with salt and pepper.
  3. Heat olive oil in a skillet over high heat. Sear the beef on all sides.
  4. Remove the beef and let it cool. Spread Dijon mustard over the beef.
  5. In the same skillet, sauté mushrooms until moisture evaporates. Let cool.
  6. Roll out the puff pastry and cut into squares.
  7. Place a small amount of mushrooms on each pastry square, then add a piece of beef.
  8. Fold the pastry over the beef and seal edges.
  9. Brush with beaten egg.
  10. Bake for 20-25 minutes until golden brown.
