Delicious bite-sized versions of classic Beef Wellington.
Ingredients

- 1 pound beef tenderloin, trimmed
- 1 tablespoon olive oil
- 1 cup mushrooms, finely chopped
- 2 tablespoons Dijon mustard
- 1 sheet puff pastry, thawed
- 1 egg, beaten
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the beef with salt and pepper.
- Heat olive oil in a skillet over high heat. Sear the beef on all sides.
- Remove the beef and let it cool. Spread Dijon mustard over the beef.
- In the same skillet, sauté mushrooms until moisture evaporates. Let cool.
- Roll out the puff pastry and cut into squares.
- Place a small amount of mushrooms on each pastry square, then add a piece of beef.
- Fold the pastry over the beef and seal edges.
- Brush with beaten egg.
- Bake for 20-25 minutes until golden brown.
Notes
- Serve warm for best flavor.
- Can be made ahead and frozen before baking.
