Ingredients

  • 2 lbs beef cheeks
  • 2 cups beef stock
  • 1 cup red wine
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 2 sprigs thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef cheeks with salt and pepper.
  3. In a large oven-safe pot, brown the beef cheeks on all sides.
  4. Add onion, carrots, and garlic, and sauté for a few minutes.
  5. Pour in the red wine and cook for 5 minutes.
  6. Add beef stock and thyme.
  7. Cover the pot and place it in the oven.
  8. Cook for 3 hours or until the beef is tender.
  9. Remove from oven and let rest for 10 minutes before serving.
