Description
Tender beef cheeks slow-cooked in rich jus.
Ingredients

- 2 lbs beef cheeks
- 2 cups beef stock
- 1 cup red wine
- 1 onion, diced
- 2 carrots, chopped
- 2 cloves garlic, minced
- 2 sprigs thyme
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef cheeks with salt and pepper.
- In a large oven-safe pot, brown the beef cheeks on all sides.
- Add onion, carrots, and garlic, and sauté for a few minutes.
- Pour in the red wine and cook for 5 minutes.
- Add beef stock and thyme.
- Cover the pot and place it in the oven.
- Cook for 3 hours or until the beef is tender.
- Remove from oven and let rest for 10 minutes before serving.
Notes
- Serve with mashed potatoes or crusty bread.
- Leftovers can be stored in the fridge for up to 3 days.
