- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- Let the potatoes cool slightly, then cut in half and scoop out some flesh.
- In a bowl, mix potato flesh with cheese, bacon, sour cream, green onions, salt, and pepper.
- Fill the potato skins with the mixture.
- Top with remaining cheese.
- Return to the oven and bake for an additional 15 minutes until cheese is melted.
