Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. Let the potatoes cool slightly, then cut in half and scoop out some flesh.
  5. In a bowl, mix potato flesh with cheese, bacon, sour cream, green onions, salt, and pepper.
  6. Fill the potato skins with the mixture.
  7. Top with remaining cheese.
  8. Return to the oven and bake for an additional 15 minutes until cheese is melted.
