Delicious apple pie cookies with a sweet filling.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups diced apples
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 egg, for egg wash
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, sugars, and salt.
- Add butter and vanilla. Mix until combined.
- In another bowl, combine apples, cinnamon, and lemon juice.
- Roll out dough and cut into circles.
- Add apple filling to half of the circles.
- Top with remaining circles and seal edges.
- Brush tops with egg wash.
- Bake for 20-25 minutes until golden brown.
- Let cool before serving.
Notes
- Use tart apples for best flavor.
- Store in an airtight container.
- Can be frozen for later use.
